Copper Kettle Method
Ingredients:

30 gallons cider
20 gallons snit (peeled and cored      and chopped apples)
25 lbs sugar
2 tbsp cinnamon
Directions:

   Boil cider down slowly to half the amount you started with. Add apples. Cook down again and add sugar. Boil til it stays apart when you put in a dish and run a spoon thru it. Add cinnamon as you remove it from the fire. While hot you may put it in glass jars and seal. Real old-timers used stone crocks.
