Artichoke & Rice Salad

Ingredients:

1 pkg chicken rice mix
4 scallions (sliced thin)
1/2 green pepper (chopped)
12 pimento stuffed olices (sliced)
2-6 oz jars artichoke hearts in oil
3/4 tsp curry powder
1/3 cup mayo
Directions:

Cook rice per instructions on box. Cool. Add scallions, green peppers, and olives. Drain artichoke hearts rserving oil and cut hearts in halves. Combine oil, mayo and curry powder. Add oil mixture to rice mixture and mix well. Chill and serve.
