Beignets
Ray Robin
Ingredients:

1 cup flour
1 egg
1 tsp baking powder
2/3 cup of milk (approx)
1/2 tsp sugar
pinch of salt (1/4 tsp or less)
oil
powdered sugar
Directions:

    Mix batter until smooth but not watery.  Heat oil to 325-350 drop batter by spoonfuls into hot oil. Fry till brown turning them a couple times.  Place a few paper towels in bottom of brown paper bag. Remove beignets from oil  and place in bag. Sprinkle in desired amount of powdered sugar and shake. You can sprinkle on more sugar when served if wanted.

    Note: the easy way is to cut canned biscuits into halves or thirds and fry them as above. Its easier and almost as good.
