Creole Rice Calas

Ingredients:

6 tbsp flour
3 heaping tbsp sugar
2 tsp baking powder
1/4 tsp salt
1/4 tsp vanilla
2 cups cooked rice
2 eggs
pinch of nutmeg
cooking oil
powdered sugar
Directions:

    Mix together flour, sugar, baking powder, salt and vanilla.
    In separate bowl thoroughly rice and eggs together.
    Add flour mixture to rice mixture and thoroughly mix again.
    Drop by spoonfulls into hot grease (360 degrees and fry until brown. Drain.
    Sprinkle with powdered sugar and serve while hot. Also good if served with honey or syrup instead of powdered sugar.
