Chicken    with
Spinach Pasta Sauce

Ingredients:

Chicken
1 lb pkg fusilli pasta
2 tbsp olive oil
1 lb boneless, skinless chicken breast

Sauce
1 tbsp olive oil
1/4 cup chopped onions
3 minced garlic cloves
10 oz pkg frozen, chopped spinach
1- 14oz can low-salt chicken broth
1/4 tsp nutmeg
1/4 tsp pepper
1/4 cup grated parmesan cheese
Directions:

Chicken
    Cut chicken into bite-sized pieces. Cook pasta as label directs and drain. Heat 2 tablespoons of oil, add chicken and saute` until browned. Keep pasta and chicken warm.

Sauce
    Make sure spinach is thawed and drained. In a saucepan, heat oil and add onions and garlic. Saute` until tender. Add spinach, broth, nutmeg and pepper. stir together. Pour into food processor and puree` until smooth. return to pan. Add cheese and heat (do not boil). Pour sauce over pasta. Mix well. Add chicken and serve.
    Makes about 8 servings
