Crawfish Casserole

Ingredients:

2 Lbs crawfish tails
16 Oz broad egg noodles
4 Tbs chopped parsley
3 Med. onions, chopped
1 qt half & half
5 ribs celery, chopped
1 lb Velveta cheese
4 toes garlic, chopped
1 1/2 cups butter
1\4 cup flour
salt & pepper to taste
La. hot sauce to taste
parmesan cheese
Directions:

1) Cook noodles per package directions
2) On LOW fire, sauté vegetables in butter, add parsley and garlic and sauté till limp.
3) Add flour and crawfish and stir together, cover and cook about twenty minutes, Stirring often.
4)  Add velveta and half & half(Don't add the whole quart at one time) and cook about fifteen minutes.
5) Add noodles and cook about ten minutes
6) Grease casserole dish or large aluminum pan and add ingredients.  Add parmesan cheese on TOP.
7) Cook at 350* approximately 30 - 45 minutes

Serves approx. 16
