Crawfish Pie

Ingredients:

2 pie shells
1 lb leftover crawfish
1 cup cooked rice
1 can sliced mushrooms
1 can cream of mushroom soup
1/4 cup salsa
1 med yellow onion
1 med bell pepper
1/2 cup cheddar cheese
1/2 cup mozzarella cheese
Directions:

    Bake one pie shell at 400 degrees for 10 minutes.
    Chop onion and bell pepper then saute with one tablespoon of butter until onions are getting translucent.
    Remove from heat and add remaining ingredients.
    Cover with other pie shell. Seal and make some vents in shell.
    Bake at 400 degrees until golden brown.
    Top with added cheese of choice.

Serves:  6 Ample Portions
