Dixie Relish
Ingredients:

1 qt chopped cabbage fine
2 cups fine chopped onion
4 cups bell pepper chopped fine
1/2 cup salt
3 tbsp whole mustard seed
2 tbsp whole celery seed
1 qt cider vinegar
4 cups sugar

You may want more sugar depending on your taste. Remember to cool it before adding more sugar so that you can better gauge consistency.
Directions:

    Dissolve all the salt in 2 qts. cold water and add all the chopped veggies. Let stand for 1 hour, drain and then taste for salt. If to salty rinse veggies. After you have drained it add the rest of  ingredients and simmer for 30 min. Place in pint jars and cold pack .
