Ingredients:
Cake;
2 1/4 cups flour
2 tsp baking soda
1/2 tsp salt
6 1 oz squares simi sweet baking chocolate
1/2 cup unsalted butter
2 1/2 cups dark brown sugar
3 eggs
1 1/2 tbsp vanilla extract
1 cup sour cream
1/2 cup hot water
Frosting;
6 1 oz squares white bakers chocolate, melted
1/4 cup unsalted butter
1 egg yolk
4 cups powder sugar
2 tbsp vanilla
2 tbsp heavy whipping cream
1 8 oz pkg cream cheese soften
Ganache Filling;
2 cups simi sweet chocolate chips
1 cup heavy cream
Directions:
1. Preheat oven to 350 deg. Butter either a 9x13 or 2, 8 inch pans and set aside. Next melt the chocolate for the cake and set aside to let cool to room temp. Combine in a bowl flour, soda and salt and set aside.
2. In a large bowl cream together butter and sugar until fluffy. Beat in the eggs 1 at a time. Next stir in vanilla, half the flour mixture, half the chocolate and half the sour cream. Repeat with other half until all is used then add the water. Pour into the pans and bake until it comes away from pan sides and middle is done.
3. To make the frosting. In a double boiler melt the white chocolate and set aside. In a mixer beat butter until fluffy, then add the egg. Next add the sugar, the chocolate, the vanilla, the cream and then the cream cheese. Beat until light and fluffy. You may need more sugar depending on the weather.
4. Melt the chips and the whipping cream together until smooth and set aside till cool.
5. To assemble cake. If you are using the 9x13 you will need to remove from pan and cut in half. Next spread the ganache filling on and place in fridge till cool and some what hard. Take out and put the top layer on and frost with butter cream.
6. If you wish, and if you bought an 8 oz pkg of the chocolate you used for the cake, you can make lace out of that for a stunning finish to the cake. All you need is a bit of imaganition and time. Enjoy!!!!
