Lemon Poppy Seed
Amish Friendship Bread

Ingredients:

2  cups all-purpose flour
1 cup white sugar
1-1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp poppy seeds
1 cup sourdough starter
2 eggs
1/2 cup milk
1/2 cup applesauce
2 tsp vanilla extract
1/2 cup vegetable oil
2 (3 ounce) packages instant                 lemon pudding mix
Directions:

1. In a large mixing bowl blend together the flour, sugar, baking powder, baking soda, salt, cinnamon, poppy seeds, and lemon pudding mix. Make a well in the center of the bowl.

2. In a separate bowl, mix together the Amish starter, eggs, milk, applesauce, vanilla, and vegetable oil. Add to dry ingredients and blend until just combined. Pour batter into 2 greased loaf pans.

3. Bake in a preheated 325 degree F (165 degrees C) oven for one hour. Cool for 10 minutes on  a wire rack. Remove bread from pan.

This is my favorite amish recipe. You can substitute the pudding for any flavor you wish. You can replace the applesause for any fruit. In some breads omit the cinnamon and poppy seeds. I always sugar my pan sprayed with pam instead of flouring it. Other options you can try are;

chocolate pudding----chocolate syrup (my favorite)
bananna pudding----bananas
pistacio pudding----applesause
vanilla pudding----apples or pears
tapioca pudding----blue,black,strawberries or cherries
Lemon----applesause
butterscotch----applesause
