Jobys Gourmet Meatloaf

1 lb italian sausage
2 lbs ground chuck
1 med onion chopped
4 cloves garlic finely chopped
1-1/4 cups dry bread crumbs
1 cup chopped italian parsley
2 eggs beaten
1/2 cup tomato sauce
1/2 cup red wine
1 tsp dried oregano
1 tsp salt
1 tsp pepper
2 cups fresh chopped spinach
4 oz tomatoes
1/2 cup chopped black olives
1 lb mozzarella chese thinly sliced

   Remove italian sausage from casing then crumble. Combine with ground chuck, onion, garlic, bread crumbs, parsley, eggs, tomato sauce, wine, oregano, salt and pepper in a bowl and mix well.
    Spread into a 12" by 15" rectangle on a large sheet of wax paper.  Spread the spinach on the rectangle leaving the edges uncovered.  top with the tomato sauce, olives and 3/4 of the cheese.
    Roll meatloaf to enclose the filling using the wax paper to get started. Seal ends and place seam down in a foil lined baking pan.
    Bake at 350 deg F for one hour or till done. Top with remaining cheese and bake till cheese melts.
