Ingredients:
2 lb cooked chicken, diced
1 1/2 cup long grain rice
1 can mushroom soup
3 1/2 cup water
1 tsp onion powder
1 can Ro*tel diced tomatos
1/2 cup shredded chedder cheese
Directions:
Over medium heat cook your chicken in the 3 1/2 cups of water with lid. remove chicken and debone. Pre cook rice in chicken broth for 10 minutes. Add Ro*tel, soup and onion powder to the rice and broth. Mix your chicken back in and pour into a 9 x 13 pan sprayed with cooking spray. Bake for 30 minutes and add cheese for the last 5 minutes.
