Ingredients:
1/4 stick of butter
2 large onions chopped (about 2 cups)
1 tbsp spoon diced garlic
1 cup bell pepper chopped
1 can of diced Ro*tel tomatoes
1 table spoon Tony chachere's
Louisiana hot sauce to taste
1/2 cup of parsley chopped
1/2 cup green onion tops chopped
2 cans whole kernel corn
1/2 cup of evaporated milk
2lbs crawfish or shrimp or crabmeat or (what ever is handy)
Directions:
Melt butter to cover bottom of medium sized heavy pot. Sauté onion till lightly browned. Add corn, bell pepper, garlic, Ro*tel and simmer 1 hr on low heat. Add seafood, milk, green onion tops and parsley. Simmer another 15 minutes add water if necessary during simmering time.
Makes 6 good servings.
***Note: Fresh corn, of course, works best. Use about 5 ears and the cornmilk, if available, (about 3 cups), and eliminate the evaporated milk.***
