Ingredients:

1 lb ricotta
3 eggs (slightly beaten)
1/4 cup sugar
1 cup flour
4 tsp baking powder
1 tbsp vanilla
dash salt
Directions:

1) Combine ricotta with beaten eggs and sugar. Sift flour with baking soda and salt. Add to ricotta mixture and add vanilla.
2) Let rest for 1 hour.
3) Drop by tbsp's into hot oil (about 2 inches) and brown (med) on one side then turn over and brown other side.
4) Drain and dust with powdered sugar.
