Susie’s Mexican Casserole

Ingredients:

1 pound ground meat
2 stalks celery chopped
1 medium onion chopped
1 medium bell pepper chopped
1 pkg. Taco seasoning
1 can chopped ripe olives
1 can Corn
1 can Rotel tomatoes and green chiles
1 small can tomato sauce
½ cup water
Directions:

Preheat to 400°
Brown meat and green peppers, onions and celery, then drain. Add taco seasoning, olives, corn, tomatoes, sauce and ½ cup water. Stir and simmer on low heat for 5 minutes. Meanwhile prepare cornbread mix, water and egg. Put meat mix in a casserole, sprinkle cheese on top then pour cornbread mix overall. Might have to add a bit more water to cornbread if too thick to easily cover top. Bake for 20 minutes.
