Smothered Potato's

Ingredients:

2 lb smoked sausage
15 cups chopped onions
3 tbsp Tony Chachere seasoning
2 tbsp garlic powder
2 tbsp worcestershire sauce
10 lbs potato's, diced
1/2 cup chopped parsley
8 cups water
Directions:

    Slice sausage and then quarter. Combine sausage and onions in large black iron pot.
Add Tony Chachere's, garlic powder, and worcestershire sauce. Brown until onions are a golden brown. ( you may need to deglaze the bottom of the pot a couple times. Use a couple ounces out of your beer. If you don't have a beer then shame on you, use some water.) Add diced potato's and 8 cups of water. Cook over medium heat till done. Add parsley. Wait 10 minutes before serving.

Serves an army of hungry campers (15 to 20 servings)
