Special Potatoes

Ingredients:

6 to 8 red potatoes
1/2 cup butter (melted)
8 oz carton sour cream
1 cup chopped green onions
1 1/2 cup grated cheddar cheese
salt & pepper to taste
Directions:

    Boil potatoes in jackets. Let cool. Remove skin and discord. Cut potatoes into small pieces. Mix melted butter, 1 cup cheese, sour cream and onions together. Add potatoes to mixture and top with remaining cheese. Bake at 325 for about 30 minutes.
