Ingredients:
Dough:
1 1/2 sticks unsalted butter softened
1 1/3 cups sugar
1 tsp vanilla
1 lg egg
4 2/3 cups flour
2 tsp baking powder
1/2 cup milk
Filling:
1 lbs dried figs stemmed and choped in a processor
2 1/2 cups water
1 cup sugar
1/4 tsp nutmeg
1/4 tsp allspice
1 tbsp lemon juice
***Note: This dough is great with any of your favorite fillings.
Directions:
Dough:
In a bowl beat the butter, sugar and vanilla until fluffy.
Beat in the egg and flour in batches alternately with the milk. Chill the dough for 1 hour.
Filling:
Combine all and bring to a boil until thick. Place in a bowl and let cool.
Pies:
Divide dough into 16 pieces and roll them out to about 1/8 inch thick. Place some filling in the middle and crimp the edges. Place on a buttered cookie sheet and bake at 375 until golden brown. Remove from sheets and place on racks until cool.
