White Beans & Ham

Ingredients:

6 lbs white beans
10 lbs ham
5 lbs onions (chopped)
3 lbs bell pepper (chopped)
1/4 cup dried parsley
3 bunches green onions (chopped)
1/2 cup minced garlic
1/4 cup Tony Chachere's
1/4 cup Louisiana hot sauce
Directions:

   Boil ham until completely cooked and then cube into bite size pieces. This can be done in advance.
    Put beans, onions, ham, garlic, seasoning and hot sauce in at least a 20 quart stock pot. Add enough water to cook beans. Add as needed. Stir on occasion. Don't let stick. Cook until beans are tender. Needs to be a little thick when done. Not too runny. About 30 minutes before serving add green onions, bell peppers and parsley.
